The government just flipped the food pyramid upside down and told you to eat real food. Here is how you actually do it.

January 2026. Forty-nine years of dietary guidance reversed in one announcement. They finally said what we have been saying: eat real food, cut the processed stuff. A jar and a bowl of flour is how you start. Ten minutes tonight.

  • No special equipment
  • Three ingredients on both sides
  • Every recipe tested and filmed
The whole idea

We never ask you to add something. We ask you to swap.

You already snack. You already salt every meal. You already eat bread every week. We change what is in the jar, what is in the bag, and what is on the shelf. Same habits. Better ingredients. Nothing new to remember.

The brine side

10 min

Hands-on work per jar

You already reach for something salty at three in the afternoon. Swap what your hand lands on. A jar of fermented vegetables is cold, loud, crunchy, and still alive when you bite into it. About two dollars a jar, and the brine is a second product you were going to pour down the sink.

Ingredients in the loaf

You already buy bread every week. The bag in your cupboard has twenty ingredients, half of them there so it can survive a warehouse. A real loaf is flour, water and salt. A sourdough starter costs nothing to build and lives in a jar on the same counter as your ferments.

Same shape on both sides. The recipe assumes an ingredient you are not using, so your result drifts and you assume you are the problem. You were not. Nobody told you what was in the bag.

Same story, every aisle

They removed the part that matters. They killed the part that was alive.

The bread aisle

About a quarter of the wheat kernel comes out before it reaches you. The part they removed is where the magnesium and zinc were concentrated. Then they replaced three hours of fermentation with high-speed mixing and a packet of additives. Time costs money. Nobody put time on the label.

The pickle aisle

They dropped a cucumber in vinegar and called it a pickle. Nothing grew. Nothing is alive. The sour came out of a bottle. The jar on the shelf looks the same as your grandmother's, but everything that was in hers is missing from theirs.

The beverage aisle

In 2010 Whole Foods pulled GT's kombucha off every shelf because the bottles kept fermenting past 0.5% alcohol. The industry's fix was to kill the culture. Pasteurized kombucha. Force-carbonated kombucha. Five dollars a bottle for something that is no longer alive. The label stayed. The life left.

Three aisles. Same move every time. Strip what is alive, sell what is left, charge more for it. That is why this is one society, not three hobbies.

One list, both skills. No spam, nothing to pay.

The thread through all of it

A kitchen that can feed your family without a grocery run

Both of these skills put food on a shelf with nothing plugged in. That is not preparation for a disaster. That is a quieter way to live.

A wooden shelf lined with glass jars of preserved vegetables, brown paper tied over every lid
Nothing on that shelf needed electricity to put there.
No power required

Canning wants fuel, a stove and new lids. Freezing wants a grid that stays on. Dehydrating wants electricity or a lot of sun.

Both of ours want salt, water, a jar and time.

A finished ferment holds one to three months at room temperature, three to six in a cool pantry, six to twelve in a cellar. Whole grain berries hold for years in a sealed bucket. Flour starts changing in weeks. That is why every pantry that ever mattered stored grain, not flour.

Calm capability

You remember March 2020. Shelves stripped before noon. People fighting in the grocery store over toilet paper.

I had jars. I was not panicked. Not because I saw it coming. Because a pantry full of food you made yourself is not a bet on the world getting worse. It is just being able to cook.

That is all a pantry ever was. Not a bunker. A pantry.

The courses

Learn one skill or learn both

Each course stands alone. The bundle saves you $47 if you want the whole project.

Live now

The Mineral Brine System

Six filmed sessions, the True Salinity Method, the Brine Bar lineup, and a community of people packing jars. About two hours forty-five minutes of video.

Live now

The First Loaf System

Real sourdough from scratch, the starter schedule, the honest mill guide, and a community that will look at your crumb without judgment.

$147

One payment on each. Not a subscription, which would be a strange thing to sell you when the whole point is owning the skill. Sixty-day guarantee on both, because if the jar goes soft or the loaf goes flat, I would rather fix it than keep your money.

Why this is not another recipe collection

We did the homework. You get the answers.

The salt was lab-tested

I did not trust the bag. So I sent it to a laboratory. The certificate came back and I read it line by line until I worked out which five numbers actually matter. Every recipe in the course is built on that report, not on an assumption.

The research is documented

Stanford ran the study. Wastyk and colleagues, published in Cell in 2021. Ten weeks. The fermented-food group's microbiome diversity went up and nineteen inflammatory markers came down. I will show you the whole trial, including the parts that argue with me.

The recipes are tested

Every ferment and every loaf in the courses was packed, baked, measured, tasted and adjusted before it got filmed. The numbers are weighed, not rounded. The failures are documented, because a soft jar taught me more than a perfect one.

I'll tell you exactly what's in the jar and exactly what went into the loaf. What it does for you is between you and your body.

Who's behind this

I could not stop asking the questions.

Toledo steelworker's kid. Combat veteran. I spent over twenty years as the strategist behind celebrities, pro athletes, politicians, business owners. I coach capital gains deferrals. I am not hurting for work. This is not that.

A genetic scientist with nearly $200 million in his own research sat me down years ago and wrecked my whole understanding of food. Beta-glucans pasteurized completely out of the diet. Glycation from ingredients the body was never built to process. A food pyramid built on guidance the meat industry lobbied to water down in 1977, and it stood for 49 years before somebody flipped it upside down this January. He looked at me and said: if that can change, what else should you be looking at?

I have not stopped looking. I turn boxes around now. Every one of them. The nutritional value is depleted but the habit is still there. Breakfast, lunch, dinner. We are overeating dead food and paying more for it every year. I turned the salt bag around. Turned the flour bag around. Turned the kombucha bottle around. Turned the salsa jar around. None of them were what I thought they were. That pissed me off.

Teresa and I make everything ourselves now. It changed things we did not expect it to change. I will tell you exactly what is in the jar and exactly what went into the loaf. What it does for you is between you and your body. But I will say this: we did not expect it, and we are not going back.
